Mini Crumb Cakes


Prep Time: 10 minutes                          Makes: 6                        Oven Temperature: 350˚


1 1/4 cup of all-purpose flour

1/2 cup packed brown sugar

1/2 melted butter or margarine

1 egg

1/4 cup of milk

1 tsp of baking powder

1/2 tsp cinnamon

2 tbsp powdered sugar

Cooking Instructions:

  • Preheat oven to 350˚ and line muffin tins with cupcake liners
  • In a smal bowl mix together the flour, brown sugar and butter until it begins to clump
  • In a separate bowl combine the egg, milk, baking powder and cinnamon
  • Add 2/3 of flour mixture to the egg mixture and stir until well mixed
  • Pour your batter into the muffin tin so that each spot is about 2/3 full
  • Crumble the remaining 1/3 of your flour mixture over the batter and then place the muffin tin in the oven
  • After the cupcakes are cooled sprinkle powdered sugar over the top
